Despite its outward appearance, Frutakia is not really a fruit machine (one-armed bandit) game. In fact it's closer in spirit to a puzzle game, and most of the game modes don't even involve betting money.
The idea of the Easy and Hard game modes is simply to make lines of three or more identical symbols either in straight lines or diagonally. Nudging the wheels uses up life energy, making lines restores it. Easy lets you do this at your own pace, while Hard gradually uses up your life force even when you do nothing.
The third mode, Frutakia, lets you bet on each move as a percentage of your current score.
On the whole Frutakia doesn't really have enough variety of gameplay to hold your attention for very long, and there isn't really any clear strategy to winning either. It mostly comes down to simply waiting for the right symbols to be near each other and hoping that your energy doesn't run out first.
